Cuckoo! This month brings yet more exciting news as, for the second year running, we brought home the 'Best Individual Cake' title from the Scottish Baker of the Year Awards, for our Raspberry & White Chocolate cupcake! Yep, it's official. We really do make the best cake in the land.
The foundations of Cuckoo's Bakery are built on a loyal fan base of devout tasters, enterprising suppliers and our hardworking staff. Much as we enjoy creating and inhabiting our own "cake wonderlands" at our tea room and cake shop, we love to stretch our wings and it's always so rewarding to receive industry recognition for the cakes we bake. So, we were delighted to don our bling and head to Glasgow to attend the Scottish Baker of the Year Awards 2015 and face the scrutiny of our baking peers. Our bakers are a modest bunch and it's great to see their excellent skills in the spotlight.
Since winning 'Best Individual Cake in Scotland' at the awards in 2014, our Raspberry & White Chocolate cupcake has been flying off the shelves of our haberdashery. It's a firm favourite as a celebration cake too, classic with just enough quirkiness to get people talking, not to mention those tempting fresh raspberries bobbing on the top (you can order cupcakes and celebration cakes in-store or online.)
The Scottish Baker of the Year Awards is our Met Gala, our Baftas, our Ivor Novellos... Scottish Bakers has been the voice of the Scottish baking industry since 1891 and the awards are an important date in the industry calendar. We were proud to take our seats among baking royalty and are delighted to have triumphed in the 'Best Individual Cake' category for the second year in a row. "It's inspiring," says Vidya, "to be surrounded by all these companies at the forefront of the baking scene. It spurs us on to be more original, more productive, more Cuckoo."

Over the years, we have delivered thousands of Raspberry & White Chocolate cupcakes for birthdays, leaving dos, hen parties, Breast Cancer awareness events and of course during our Scottish Referendum cupcake poll... we're glad that our creations can play their part in our country's baking folklore.

We carefully select each component to represent the best of Scottish produce and each of our cakes is baked with respect for the quality of ingredients we choose. We begin in the deliciously gooey centre of Galloway Lodge Raspberry Jam. Then comes the sponge, where our bakers use a precise combination of rich Scottish butter, free range eggs from Dalkeith and skip across the Forth for Fife-milled flour to create a light, fluffy sponge. We jet to warmer climes for a drop of vanilla seed extract because, well, every Scot needs a bit of sunshine. Finally, it's all topped off with a generous whirl of Belgian white chocolate buttercream, tipping the scales and placing the recipe firmly in indulgence territory.
We're proud to bring the 'Cake of the Year' title home to Edinburgh again. The fact that this is the second year we've won is testament to our bakers' passion. For our bakers, who start work at 1 o'clock each morning, it can sometimes feel as though they occupy a twilight zone, firing up the ovens and tying on their aprons while the rest of Scotland is either still asleep or not yet in bed. Our bakers are the heart and soul of Cuckoo's. It's a demanding job, physical as well as creative, fueled by good music on the radio, an encyclopedic knowledge of all things bake-related, copious cups of coffee and endless bags of innovation and enthusiasm.
