Cuckoo! Welcome to our new feature, Behind the Cuckoo Clock, here by popular demand. Each month, we'll be bringing you a sneaky peek behind the scenes, introducing you to our lovely folk who work with us to bring Cuckoo's Bakery's creations to life!

Who are you and what do you do at Cuckoo's Bakery? 
I'm Kim, Front of House Supervisor at the Bruntsfield shop. I ensure the smooth running of the day to day business and am the first point of call for any problems or queries.

Describe a typical shift.
Every day is different. I start by opening up, setting up all the equipment, putting the cakes into the haberdashery and the treats on display. Then I box up all of the orders for the day making sure that everything is correct. Throughout the day I divide my time between being on the shop floor and doing admin work. I’m also currently updating the Pinterest page so I try to spend a bit of time looking through our photos seeing which flavours are the most popular and how we can improve. We are always looking for new, quirky ideas for decoration and flavours, that’s one of the things that sets us apart from other cupcake shops. I like to spend as much time as possible at the front of house as I love interacting with the customers and hearing their opinions and suggestions.

Talk us through your favourite part of your job.
The social aspect of it. I love meeting new people and having someone to talk to whilst I work. Also seeing the smile on someone's face when they see the cakes for the first time or knowing that you have helped improve their day in some way makes my day worthwhile.

What's on your stereo while you work?
We listen to a variety of music including The Puppini Sisters, Christina Aguilera and lots of Disney. There's nothing better than singing along to songs from your favourite childhood films while you work.

Who or what inspires you?
My Dad. He always told me to work hard for what I want and to stand up for what I believe in as no one else is going to do it for me. I also really like to prove people wrong when they say I can't do something- I find that to be a good motivator to get something done.

Favourite thing on the Cuckoo's menu?
Ooh that's a tough one. I do love the coconut milkshakes and any cake with peanut butter frosting on is a winner in my book.

How would you spend an ideal day off?<
I would probably have a lie in then take my puppy for a nice long walk, and maybe a picnic, at Portobello beach. I'd spend the afternoon relaxing with a good book and a cup of tea before going out for dinner and drinks with my fiancée. My work days can be so hectic I like to relax and take it easy on my days off.

Favourite place in the whole of Edinburgh?
I should probably say Arthur's seat seeing as that's where I got engaged! Other than that I love walking along the Water of Leith. Having grown up in the countryside it's nice to escape the hustle and bustle of the city sometimes and go somewhere a bit more peaceful.

If you could work in a Cuckoo's Bakery anywhere in the world, where would it be and why?
To be honest it would probably still be Edinburgh. It might sound boring but having moved around so much as a child it’s nice to finally have somewhere to call ‘home’. Although I would quite like it if the shop was closer to where I live!
